Will Peregrine, originally from just outside Manchester, UK, but raised in the multicultural city of Brussels, draws inspiration from a diverse range of cuisines. From French and Mediterranean to Persian and recipes collected from his parents’ travels, Will’s culinary background is a rich tapestry of flavours.
Will’s journey into the culinary world was fuelled by his love for travel and the thrill of busy services. He has had the privilege of working alongside renowned chefs, cultivating his own unique style and passion for food.
Throughout his career, Will has worked in popular spots across the UK, Belgium, and Australia, including Brisbane and South Australia. His experiences have exposed him to a wide variety of cuisines, with European influences and a deep appreciation for Central American, Indonesian, and Persian dishes.
Will’s culinary adventures haven’t been limited to the kitchen. He’s had the opportunity to travel for culinary experiences, with Spain leaving a lasting impression. Exploring Central America and cooking on a remote island during a solar eclipse event have added a unique dimension to his culinary repertoire.
His culinary style is a fusion of French training, a Spanish heart, an Italian palette, and creative exploration on the open sea. Will’s creativity in the kitchen is driven by quality produce and a commitment to highlighting local farmers and suppliers. Each meal he creates is a unique reflection of the sourcing of ingredients, staying light on his feet and embracing local flavours.
While Will doesn’t shy away from experimenting with various dishes, his personal favourites include Persian Fesenjoon and homemade fettuccine carbonara. When not in the galley, he enjoys beach camping, making music, and surfing.
